What you’ll learn
Two hours that includes instruction on how to properly judge North Carolina barbecue for taste, tenderness and appearance.
We will be cooking and judging fresh barbecue from a whole hog, shoulder and a whole chicken!
We will also discuss how a turn-in box should look, how to judge it for appearance, taste and tenderness, and what constitutes an automatic disqualification.
